Green Jello Christmas Salad

Few like it, but we keep serving it. This is Grandma Petersonç—´ recipe. Double it for a big family meal or if you want leftovers.


1 sm. pkg lime jello
1 c. hot water
1/2 c. cold water
1/2 c. mayonnaise
1/2 c. small curd cottage cheese
1/4 t. salt
1 c. diced apple
3/4 c. seeded red grapes
1/4 c. walnuts
Chopped fresh pear, canned pineapple, or other fresh fruit
Maraschino cherries


Dissolve jello in hot water. Add cold water, mayonnaise, cottage cheese, and salt. Blend well with a rotary beater. Put in freezer trsy and quick chill in freezer for about 15-20 minutes until firm about one inch from edge but soft in center. Turn mixture into bowl and whip with beater until fluffy. Fold in apples, grapes, walnuts, fruits. Decorate one-quart mold with maraschino cherries. Pour jello mixture into mold and chill until firm in refrigerator 60 minutes or up to a day ahead of meal. Unmold.
